Eggnog No Oats

Eggnog No Oats is a Holiday makeover of my classic No Oats. Overnight No Oats was created as a low-carb alternative to overnight oatmeal.

I have been wearing a continuous glucose monitor for over two years now. One of the things that became apparent to me almost immediately was that the carb content in oatmeal is very high in relation to its protein content. So high in fact, that even when combined with protein, I still get massive blood sugar spikes. With blood sugar spikes I get chest pain and feel jittery and then of course I will have a blood sugar crash an hour later and am hungry again.

So, unfortunately, oatmeal is a definite no-go for me, it’s just not worth the blood sugar roller coaster and the chest pain. Given I can’t eat traditional overnight oats, I wanted to create something like overnight oats that could be prepped the night before, stored in the refrigerator overnight, and enjoyed in the morning. That is how Overnight No Oats was born.

Just in time for the holidays, I created Eggnog No Oats so you can kickstart your day with the festive flavors of the season and not have to worry about blood sugar imbalances. They are perfect for instilling a bit of holiday cheer into your morning. Though not limited to just breakfast, these no-oats make a great snack too. Feel free to top the no oats with your favorite breakfast toppings whether it be nuts, seeds, fruit (fresh or frozen are good) coconut flakes, or whatever else you like. If you prefer sweeter oats you can drizzle a touch of maple or keto syrup over them

  • Chia seeds – Use chia seeds or basil seeds for more protein and healthy fats.
  • Goat whey protein – Even more protein with protein powder. Use a vegan vanilla protein powder as a substitute if you don’t have goat when protein on hand.
  • Spices – I added cinnamon and cardamom for the seasonal flavor.
  • Eggnog  – Try my easy homemade “Eggnog”) or use Malk brand which contains minimal ingredients and is lightly sweetened with maple syrup.
  • Coconut yogurt – Add coconut or Greek yogurt for even more protein and creaminess!
  • Pomegranate arils – These add a nice pop of color and are rich in antioxidants.

How To Make Eggnog No Oats

  • In a lidded jar, add the 3 seeds, goat whey, cinnamon and cardamom. Shake very well to mix.
  • Pour eggnog over the blend and shake again. You might need to mix with a spoon to make sure seeds on the bottom of the jar are mixed in too.
  • If you are preparing it at night, store it in the fridge and top with yogurt and pomegranate arils in the morning.
  • If you will be enjoying right away, allow seeds to soak up eggnog for a few minutes, then top and enjoy!

Storage

These Eggnog No Oats will keep in the fridge in a lidded jar for up to one week.

Pro Tips

Here are a few things you can do to make sure your Eggnog No Oats turn out every time.

  • Keep a stash of the hemp, chia and flax seeds in a jar in the fridge so you can easily make up a batch of these no oats.
  • Make sure to use ground flax seeds as the body can not digest whole flax seeds.
  • Modify the spices to suit your tastes or add your favorites.
  • Prepare individual servings in mini mason jars for a grab and go breakfast option.
