Why You’ll Love This Flourless Fudge Brownie In a Mug

This flourless fudge brownie in a mug is a decadent, rich chocolate dessert that will most definitely satisfy any chocolate craving without raising your blood sugar. With just a handful of ingredients and one minute of cook time, this fudge brownie is the ultimate sweet treat. It’s also gluten-free, vegan, and suitable for those following a low-carb diet.

Ingredients To Make Brownie in a Mug

  • Cacao powder – I used unsweetened cocoa powder.
  • Chocolate protein powder – Use your favorite protein powder, this helps keep your blood sugar in check.
  • Allulose or sweetener of choice
  • Baking powder – Just a touch of baking powder helps this brownie in a mug rise.
  • Pinch sea salt
  • Nut butter – Make sure it is all natural, no added sugar or oils. Choose peanut, almond or cashew.
  • Coconut oil – Make sure to melt the coconut oil. If you aren’t keen on a coconut flavor choose a flavorless coconut oil
  • Milk of choice – If you are using a nut milk, make sure it is unsweetened.

Equipment

  • small mixing bowl
  • mug or 4″ ramekin
  • measuring cups and spoons

How to Make Brownie In a Mug

  • Mix dry ingredients together in a small bowl.
  • Mix together nut butter, coconut oil and milk.
  • Add wet ingredients to dry ingredients and mix well.
  • Pour the batter into a mug and microwave for one minute. It will be a pudding-like consistency.
  • Allow your brownie to cool before eating as the center will be very hot.
  • Enjoy this fudgy, moist brownie mug cake!

Storage

Leftover fudge brownie in a mug will keep for a few days in an airtight container though it is best eaten fresh. If you do have leftovers you can pop them back in the microwave for a few seconds to soften. I don’t recommend freezing any leftover brownies.

Tips

Here are a few things you can do to make sure your fudge brownie in a mug turns out every time.

  • Coat the mug with butter, coconut oil, or olive oil spray. These mug desserts are notorious for sticking so if you grease the mug well clean-up will be a bit easier.
  • To make this brownie in a mug vegan choose a plant-based milk.
  • To enhance the chocolate flavor, I sometimes add a touch of instant espresso powder to the batter or sprinkle sugar-free chocolate chips on top while the brownie is still warm.
  • The brownie can also be cooked in a ramekin, just make sure it is microwave safe.
