With the change of seasons upon us, you may start to crave heartier, comfort foods. Enter this grain-free Paleo Meatloaf with Mushrooms. Made with ground beef, mushrooms, onions and traditional meatloaf spices, this savory loaf comes together quickly and easily for a family-friendly meal. We like to eat this meatloaf with sweet potato fries and broccoli but you can most definitely serve it up with whatever your family likes.

You can’t go wrong with this basic meatloaf recipe. Grain-free, gluten-free and paleo it is the perfect way to get some comfort food without compromising your blood sugar.

Ingredients To Make Meatloaf

  • Ground grass fed beef – You can also use bison or pork or any combination of the three.
  • Sea salt – I like to use sea salt but any kind of salt will work.
  • Freshly ground black pepper – Freshly ground pepper adds a touch of spice.
  • Eggs – I used organic, free range eggs but any kind of eggs will work to help bind the meatloaf.
  • Hemp hearts – Hemp hearts add texture, more protein and some good fats.
  • Onion – One medium sized onion, finely chopped. Any kind of onion will work.
  • Mushrooms – Finely finely chopped add a nice umami flavor. Button or cremini mushrooms are both good options.
  • Garlic – Freshly minced garlic adds more flavor.
  • Coconut oil – Use coconut oil, bacon fat, or olive oil.
  • Spices – chili pepper flakes, thyme, and oregano.
  • Worcestershire sauce – Worcestershire adds a deep flavor to the meatloaf.

For the top of the meatloaf:

  • Ketchup – Homemade ketchup or store bought paleo ketchup.

How To Make Paleo Meatloaf With Mushrooms

  • Preheat oven to 375 °F.
  • In a medium skillet, over medium heat, melt the fat, and sauté the mushrooms, onion and garlic for 3 to 5 minutes, or until soft. 
  • Combine the meat, salt, pepper, hemp hearts, egg, chili pepper, thyme, oregano and Worcestershire sauce in a large bowl. Mix well, breaking up the meat and incorporating the spices. Add the sautéed mushroom mixture, taking care to evenly distribute them to ensure that the loaf bonds well and does not fall apart. 
  • Divide the meat mixture into 2 “loaf” shapes and spread the ketchup on the top and sides of the meat “loaves”
  • Bake in the oven for 55-60 minutes. 

Storage

Leftover meatloaf will keep in the fridge in an airtight container for 3-4 days. You can also freeze leftovers for up to 3 months.

Here are a few things you can do to ensure your meatloaf turns out every time.

  • Grease the loaf pans slightly with olive oil or coconut oil so the loaf comes out easily.
  • If you aren’t sure when the loaf is cooked, use a meat thermometer to check for doneness. The internal temperature should be 165°F.
