Ingredients
Dressing Ingredients
- 1 bunch tarragon
- ½ bunch parsley
- ½ bunch chives
- 3 anchovy fillets
- ⅓ cup avocado oil mayonnaise
- ⅓ cup milk of choice use unsweetened nut milk or full fat dairy milk
- 1 lemon, juiced
- sea salt to taste
- freshly ground black pepper to taste
Salad Ingredients
- 6 ears corn on the cob
- 2 tbsp extra virgin olive oil
- 1 avocado
- 1/2 red bell pepper, chopped
- 1/2 cup cherry tomatoes, halved
- 1/4 red onion, diced
Instructions
Make the Dressing
- Add all of the dressing ingredients to a food processor or a blender and mix well. Set aside while you make the salad fixings.
Make the Salad Fixings
- Add 1-2 inches of water to a large skillet. Bring to a boil. Add corn and cook for 3-4 minutes, rotating to cook on all sides. Drain the water.
- Heat grill on medium-high heat. Brush corn lightly with olive oil and grill for a few minutes, rotating it as it cooks, until golden on all sides. Alternatively, you could "grill" the corn in the same skillet that you boiled it in, just getting some golden color on the kernels.
- Once the corn has cooled enough to handle, cut the kernels off of the cob and add to your salad bowl.
- Add all of the other salad ingredients to your serving bowl with the corn and drizzle with desired amount of dressing. Toss to coat all of the ingredients and enjoy! This salad can be made ahead of time as the flavors meld and intensify.
