Add all of the dressing ingredients to a food processor or a blender and mix well. Set aside while you make the salad fixings.
Make the Salad Fixings
Add 1-2 inches of water to a large skillet. Bring to a boil. Add corn and cook for 3-4 minutes, rotating to cook on all sides. Drain the water.
Heat grill on medium-high heat. Brush corn lightly with olive oil and grill for a few minutes, rotating it as it cooks, until golden on all sides. Alternatively, you could "grill" the corn in the same skillet that you boiled it in, just getting some golden color on the kernels.
