Tahini Garlic Herb Dressing

One of the first things Iearned from wearing a continuous glucose monitor is that most restaurant and store bought dressings are loaded with sugar and can ruin an otherwise healthy meal. Making dressings and sauces from scratch is a great way to add flavor and nutrients to a meal without a blood sugar spike and crash. This recipe was created for Levels Health and I am so happy to share it with you. This recipe makes about 1 cup of dressing and keeps well in a mason jar in the refrigerator.

Ingredients
- ½ cup tahini
- ¼ cup lemon juice
- 1 tbsp apple cider vinegar or sauerkraut brine
- ⅓ cup warm water (more if you like your dressing thinner or if your tahini is very thick)
- 1 clove garlic
- 2 tsp olive oil
- 1 tsp allulose sweetener
- 1 tsp sea salt
- ¼ tsp pepper
- ½ cup chopped herbs- dill, parsley, chives use all 3 or use your favorites!
Instructions
- Add all of your ingredients to a blender and blend well until all of the herbs are chopped and the dressing is vibrant green.
- Store in a jar in the refrigerator until you are ready to enjoy. This garlic herb dressing is delicious on salad, roasted vegetables, steak and fish.
