I pour this tangy, spicy, garlicky, herby goodness on everything from salad to roasted vegetables to tacos- this dressing adds serious flavor to just about anything you cook up!

Course Basics

Ingredients
 

In a blender or food processor mix up:

  • 1/2 cup filtered water
  • 2 TBS raw cashews 6-8 cashews
  • 2 TBS dijon mustard
  • 1 clove garlic
  • 1 cup avocado or olive oil
  • 5 tsp lemon juice
  • 2 TBS chopped onion
  • 1 cup mixed fresh herbs like basil mint, dill, parsely, terragon, cilantro or chives
  • salt and pepper to taste

Instructions
 

  • This dressing will keep in a jar in the refrigerator for about a week (if it lasts that long!)
