Keto Low Carb Mini Mummy Pizza: Meatzas!

Just because you are following a low carb or keto diet doesn’t mean you have to give up eating pizza. Really, what would life be like if we couldn’t eat pizza?

These meatzas or mini pizzas combine all the cheesy goodness of pizza with a low carb meat-based crust instead of the traditional flour crust. Changing the up the crust ensure your blood sugar won’t spike once you’ve finished eating them.

Pizza toppings are personal so feel free to use your favorite vegetables and cheese to make these meatzas your own. Or you can also change up the sauce and use this Dairy Free Pesto instead.

Ingredients To Make Mummy Meatzas

  • Ground meat- I used one pound of ground chicken but you can also use ground turkey.
  • Egg – You’ll need one egg to help bind the meat mixture.
  • Spinach – Add 1 cup of fresh or frozen spinach, chopped fine.
  • Italian seasoning – I added a tablespoon of Italian seasoning but if you don’t have any on hand you can add a mixture of dried basil, oregano, thyme and rosemary.
  • Sea salt – I added a touch of sea salt.
  • Pepper – I like to use freshly ground black pepper.
  • Fennel seeds – I find fennel seeds add a nice meaty flavor.
  • Goat cheese – Use a hard goat cheese, shredded
  • Pizza sauce – You can use store bought pizza sauce, just make sure there is no sugar added.
  • Black olives – I sliced the black olives. If you don’t have black you can also use green.
  • Goat cheese – You’ll need about 4 oz cut into matchsticks this time.

Equipment Needed To Make Mummy Meatzas

  • Measuring cups and spoons
  • Parchment paper
  • Baking sheet
  • Cooling rack
  • Ice cream scoop
  • Mixing bowl

How To Make

  1. Preheat the oven to 450 degrees Fahrenheit.
  2. Combine the ground meat, egg, finely chopped spinach, seasonings and cheese together in a medium bowl. Mix well.
  3. Using an ice cream scoop, make meat “balls” and line them up on a parchment lined baking sheet. Smash the balls flat with the bottom of a glass, your hands or the back of a spoon.
  4. Smear a teaspoon of pizza sauce on each meat patty and garnish with cheese strips and sliced olives.
  5. Bake at 450 for 8-10 minutes until cooked through.
  6. Enjoy and Happy Halloween!

Storage

These mummy meatzas will keep for 3-4 days in the fridge in an airtight container. You can freeze them for up to 4 months.

Pro Tips

Here are a few things you can do to make sure your meatzas turn out each time.

  • Make sure the meatzas are the same size so they cook up at the same pace.
  • If you aren’t a fan of olives you can use any vegetable you have on hand.
  • If you don’t have pizza sauce on hand you can use tomato sauce or tomato paste seasoned with dried garlic and Italian seasonings.
