Savory Lupin Flatbread -gluten free and low carb

Beth Bollinger of Nest Wellness
This savory lupin flour flatbread is gluten free, grain free, nut free and low carb! It is blood sugar friendly eaten alone or topped as a pizza. One of the things that people miss the most when they are eating for blood sugar balance, is flatbread and pizza. Lupin flour is low carb, very high in protein and such a wonderful ingredient to know about if you are eating for level blood sugar. I hope you love this easy swap as much as my family does!

For Cooking

  • Preheat oven to 425F and put your cast iron pan in the oven at the same time to heat up
  • In a mixing bowl, whisk together eggs, flours, and milk until well combined and no lumps remain
  • Season with spice, salt and pepper and mix again
  • Remove cast iron skillet from the oven and pour in 4 tbsp olive oil, then your batter. It will begin to sizzle

  • If topping like a pizza, sprinkle grated cheese while flatbread is still hot and top as desired
