- Mix eggs, cottage cheese and spices in a small bowl.
- Using a pastry brush, grease the ramekin really well.
- Pour egg mixture into the greased 4” ramekin,
- Microwave for about 2 minutes. You can stop after one minute and stir the eggs if you want a scrambled egg consistency or leave it alone and you will end up with a baked egg round (perfect for that egg sandwich)! The eggs will rise quite high so do not be alarmed- they will settle into the dish.

Storage
These high protein eggs will keep in an airtight container in the fridge for up to 4 days. You can freeze them though they most likely taste way better fresh.

What kind of eggs should I use to make these high protein eggs?
I know the egg section in the grocery store can be slightly overwhelming so I recommend you choose free range, organic eggs if possible. If this is not possible any type of eggs will work in this recipe. They all contain roughly the same amount of protein.
Can I use low fat cottage cheese?
If you want the eggs to be nice and creamy I suggest you use a higher fat cottage cheese. If you can’t find cottage cheese ricotta should work as well.
