High Protein Baked Eggs

Make these high protein baked eggs in the same time it would take to pour cereal for breakfast but a whole lot more nutritious. Eggs are one of the most nutritious foods on the planet containing choline, essential amino acids, antioxidants and even Omega 3 if you opt for those pasture raised eggs. Eggs have about 6 grams of protein each but you can up the protein by using this easy trick and the eggs come out creamy and delicious every single time! Eat right out of the ramekin or enjoy as a breakfast sandwich on a homemade english muffin.

  • Mix eggs, cottage cheese and spices in a small bowl
  • Using a pastry brush, grease the ramekin
  • Pour egg mixture into a greased 4” ramekin
  • Microwave for about 2 minutes. You can stop after one minute and stir the eggs if you want a scrambled egg consistency or leave it alone and you will end up with a baked egg round (perfect for that egg sandwich)! The eggs will rise quite high so do not be alarmed- they will settle into the dish.
  • Enjoy your eggs right out of the ramekin or turn out of the ramekin and make a breakfast sandwich using a homemade grain free english muffin!

Notes

I developed this recipe for anyone short on time in the morning. College students with a microwave for example! These eggs can be cooked in a pan on the stovetop or in the oven. For the oven method, put the ramekins on a sheet pan and surround the ramekins with a bit of water to steam the eggs. They will take about 15 minutes in the oven.
