Honey Nut Power Bars

Ingredients
1ST VERSION-CINNAMON POWER BARS:
- 1 cup cashews
- ½ cup macadamia nuts almonds or brazil nuts
- ½ cup pecans
- ½ cup unsweetened shredded coconut optional
- 1 tsp vanilla
- ½ tsp sea salt
- ¼ tsp ground cinnamon
- ½ cup raw honey
2ND VERSION-CACAO POWER BARS:
- 1 cup cashews
- ½ cup walnuts
- ½ cup pecans or macadamia nuts
- ½ cup unsweetened shredded coconut optional
- ½ cup cacao nibs
- 2 TBS cacao powder
- 1 tsp vanilla
- ½ tsp sea salt
- ½ cup raw honey
Instructions
- Preheat oven to 325°F. Line an 8x8 pan with parchment paper, leaving flaps on all four sides.
- Roughly chop the nuts in a food processor (no bigger than ¼ inch).
- Combine all ingredients for desired bar, except the honey in a large bowl, and stir until combined.
- Pour in the honey and mix with a fork until everything is evenly coated.
- Spread the mixture onto the prepared baking dish, pressing down to pack it in and reach all the edges and corners. If using fingers, grease with coconut oil first.
- Bake for 10-15 minutes.
- Allow to cool completely, and cut into 16 2”x2” bars.
- Wrap each individually for a quick snack. Eat within 1 week.
