Shakshuka Cod

Garnished with capers and preserved lemon, this fish dish is bursting with flavor and loaded with vegetables.

Ingredients
- 2 tbsp olive oil
- 3 bunches bok choy chopped
- 1 bunch broccolini chopped
- handful garlic cloves rough chopped
- 1 jar shakshuka sauce I like Mina Shakshuka
- 2 tbsp capers
- 1½ pounds fresh cod pat dry with paper towels, cut into 3-4 ounce pieces, and sprinkle with sea salt and pepper
- 1 preserved lemon diced (I like Mina brand)
- fresh mint
Instructions
- In a skillet over medium heat, add olive oil.
- Saute bok choy and broccolini until wilted and soft
- Add garlic and contiunue to cook until fragrant and soft
- Pour the jar of shakshuka sauce over the vegetables and stir to combine
- Toss capers into the sauce
- When the sauce is bubbly and hot throughput, nestle the prepared pieces of fresh fish into the hot sauce and cover with foil or a pot lid. Allow to cook for 5-7 minutes, covered.
- To serve, garnish with diced preserved lemon and fresh mint. Enjoy!
