Clams with Chorizo and Miracle Noodles

This tasty dish of Clams with Chorizo and Miracle Noodles was inspired by Andy Baraghani’s recipe for clams with ham and butter beans. I made this dish with all of the flavors of his wonderful dish but made it low-carb and blood sugar friendly. I hope you love it as much as my family does! This dish is perfect for those following a low-glycemic, low-carb diet. This noodle recipe won’t raise your blood sugar.

Ingredients To Make Clams With Miracle Noodles

  • Olive oil – I like to cook with extra virgin olive oil.
  • Chorizo – Choose grass-fed chorizo if possible, use ground chorizo if possible, or links that you can slice into rounds.
  • Onion – I used a white onion but any kind of onion will work.
  • Garlic – I used fresh garlic, don’t use jarred, fresh is way better.
  • Tomato sauce – Jarred or canned tomato sauce is fine, choose unsalted if possible.
  • Smoked paprika – Make sure to use smoked paprika, this is not the same as regular paprika.
  • White wine – I used a dry white wine but if you want to keep the dish alcohol free you can substitute chicken or vegetable broth.
  • Clams – Make sure to scrub the clams clean.
  • Miracle noodles – I used 4 packages of angel hair noodles.

How To Make Clams with Chorizo and Miracle Noodles

  1. Add olive oil to a cast iron pot and over medium heat. Brown the chorizo and remove it to a paper towel lined plate when cooked through.
  2. Add onions and garlic and cook until softened, not browned.
  3. Stir in tomato paste and paprika and cook for a couple of minutes.
  4. Add the wine to the pot and cook until it is reduced by half, about 4 minutes.
  5. Drop the clams into the pot and cover, cooking until they begin to open. This will take about 5-7 minutes depending on the size of your clams.  Once open, remove the clams to a bowl.
  6.  Open and drain 4 packages of angel hair noodles. Add them to the broth and heat through.
  7. Place the chorizo back in the pot with the noodles and heat through.
  8. Pour the noodles onto a serving plate and top with the cooked clams.
  9. Sprinkle with parsley to garnish and enjoy!

Storage

This recipe for clams with miracle noodles will keep in the fridge in an airtight container for 3-4 days.

  1. Buy clams fresh, ideally the day you want to use them or the day before.

Can I make this dish using traditional wheat-based pasta?

Yes, technically you can substitute another type of pasta but for this dish to not raise your blood sugar it is recommended to use miracle noodles.

Can I freeze this clam dish?

I don’t recommend freezing this dish. The texture and taste may not be the same.

What can I substitute for smoked paprika?

If you can’t find smoked paprika you can use chipotle powder or chili powder.

  • Add the chorizo back into the broth and noodles to warm completely.
  • Pour noodles onto a serving platter and top with cooked clams. 
  • Sprinkle with parsley to garnish and enjoy!
