Heart Shaped Meat Hand Pies with green curry

Heart shaped hand pies with a tasty green curry filling are the perfect picnic food. The crust is flaky, yet sturdy enough to be packed in a lunch box or picnic basket. The tasty green curry filling is all thanks to Mike’s Organic Curry Love Green Thai curry paste.

Hand pies are traditionally a circle of dough folded in half to make a half moon. You can certainly make these that way using a 5” or 6″ round biscuit cutter. If you make round and folded hand pies, they will be smaller so this recipe will yield about 10.

Ingredients To Make Hand Pies

Pie crust ingredients

  • Almond flour – I used 1 1/14 cups of blanched and finely ground almond flour. You can buy premade almond flour or make your own using a high speed blender. Just make sure you don’t turn the almonds into almond butter.
  • Coconut flour – I used 1 cup of finely ground coconut flour.
  • Xanthan gum  – This is used in gluten free baking and may require a trip to a specialty store.
  • Eggs – I used 6 pastured eggs but any kind of egg will work though try to buy free range or organic if available.
  • Grass fed butter – I used one cup of butter, cold and diced.

Filling ingredients

  • Grass fed ground beef bison, pork or turkey – I used about 1 pound of grass fed beef.
  • Cauliflower rice – I used one cup of frozen cauliflower rice but you can make your own using fresh cauliflower.
  • Chopped greens – I used 2 cups of frozen spinach but fresh will also work. If you don’t have spinach you can also use kale or Swiss chard.
  • Red bell pepper – I added 2 tablespoons of diced bell peppers.
  • Mike’s Organics green curry paste  – I used one package of this green curry.
  • Sea salt and pepper to taste

How to Make Hand Pies

Make the pie crust

  • In the bowl of a food processor, add almond flour, coconut flour and xanthan gum and pulse until combined.
  • To the flours, add eggs and pulse again until the eggs are just combined.
  • Add very cold, diced butter. Pulse repeatedly until just combined. You should still see pieces of butter.
  • Gather dough up into a disc shape and wrap it in plastic wrap and allow it to rest in the fridge for at least an hour (or up to 3 days if you want to make it ahead).

Make the green curry filling

  • Brown the ground meat you have chosen.
  • Add cauliflower rice, spinach, and bell pepper, and cook until vegetables are soft- about 5 minutes.
  • At this point add in a packet of Mike’s Organic Curry Love green Thai curry paste.
  • Stir to combine and taste. Add salt and pepper if needed.

Assemble the hand pies

  • Preheat your oven to 350° Fahrenheit.
  • Use either 6″ inch heart cookie cutters or 6″ round biscuit cutters. For the hearts, you will be making a top and bottom crust. For the rounds, you can either make a top and bottom crust or fold one round crust in half, creating a half moon pie.
  • Sprinkle the chilled dough with arrowroot powder (so the dough doesn’t stick to the paper) and roll between two pieces of parchment paper. Roll to 1/8 inch thickness.
  • Cut out your shapes and place them on a parchment-lined baking sheet.
  • Each 6″ hand pie will take about 1/2 cup of filling. Spread the filling over the bottom crust, leaving about 1/2″ around the edges so that your top and bottom crust will stick together.
  • Place a top crust over the filling and using your finger or the tines of a fork, crimp the edges all the way around your pie.
  • In a small bowl, beat one egg using a fork. Using a pastry brush, brush the tops of the pies with the egg wash. This will create a beautiful golden brown crust once baked.
  • Before you bake them, sprinkle your hand pies with Maldon coarse sea salt.
  • Bake at 350 for 18-20 minuntes until the pies are a light golden brown.
  • If you will be wrapping them to take with you, allow them to cool completely before wrapping. If you will be eating them right away, enjoy them warm!

Storage

These meat hand pies will keep in the fridge for 3-4 days in an airtight container. You can also freeze them for up to 3 months. Make sure to use parchment paper to separate them so you can easily pull one out at a time. Or place the pies on a baking sheet and place them in the freezer. Once frozen place them in a storage container or plastic bag.

Pro Tips

Here are a few things you can do to make sure your hand pies work out every time.

  • These pies, when made with 2 6″ pieces of crust, are very large and definitely a filling meal all by themselves. If you want smaller hand pies, use a 6″ round of dough folded in half to make moon shaped.
  • Keep a package of xanthan gum on hand so you can use it whenever you are baking something gluten free. It has a long shelf life so don’t worry it will go to waste.
  • Don’t compromise on the fridge time, it allows the dough to rest.

FAQs

Can I use this dough to bake sweet pies?

Yes, you can use this dough to bake up something sweet. You can add a tablespoon of maple syrup or monkfruit syrup to sweeten it up a touch and then add whatever sweet filling you’d like.

Can I use a different flavor of curry to make these hand pies?

Yes you absolutely can change up the curry flavor. If you aren’t a fan of green curry, choose one of the other curry flavors to add some spice to the meat mixture.
