These lemony blueberry muffins are the perfect mix of sweet and sour and no one will know that they are healthier! These muffins are grain free, low carb and blood sugar friendly with the option to make them with either paleo or keto sweeteners. Lemon blueberry muffins are a new favorite at our house and I hope your family loves them too!

Muffin Batter

Make the Muffin Batter

  • Preheat oven to 350℉
  • In a medium size bowl, add almond flour, protein powder, baking soda, and salt. Mix well using a whisk or a fork.
  • In a separate bowl, mix together eggs, melted oil or ghee, syrup, vanilla, and lemon zest. Mix well.
  • Pour wet ingredients into dry ingredients and mix well once again.
  • Fold the blueberries into the batter and spoon the batter into muffin papers, or silicone muffin liners.
  • Bake in 350℉ degree oven for 20-25 minutes until light golden brown.

Make the Lemon Glaze

  • While the muffins are baking, make the lemon glaze by mixing powdered sugar and lemon juice together in a small bowl.
  • When the muffins are cool, drizzle them with glaze, allow the glaze to dry, and enjoy!
  • These muffins will keep in an airtight container for 2-3 days, if they last that long!
