I think edible cookie dough is one of those things that almost everyone loves. For me, eating cookie dough evokes memories of baking with my Mom and my Great Grandma Marie and dipping my fingers into the mixing bowl. This recipe for edible cookie dough made healthy is so versatile. There are sweetener options for paleo and keto as well as the instructions to make them blood sugar friendly. You can make them as written, add additional protein powder and even bake them to make little cookies! I hope you enjoy this recipe as much as my children and my husband do.

Equipment

Ingredients
 

  • 1 cup almond flour to increase the protein content in these cookie dough bites, use 1/2 c almond flour and 1/2 c protein powder!
  • 1/2 tsp cinnamon
  • 1/8 tsp sea salt
  • 1/4 cup cashew butter
  • 3 tbsp maple syrup or keto syrup (to keep these keto or more blood sugar friendly, use keto syrup in this recipe)
  • 1/2 tsp vanilla
  • 1/4 cup dark chocolate chips (use code NEST to save on all HU products)

Instructions
 

make the cookie dough

  • In a small bowl, combine almond flour, cinnamon and salt
  • Add in cashew butter, syrup, and vanilla and mix well
  • Fold in chocolate chips

form the cookie dough bites

  • Using your hands, roll into 1” balls
  • Store uneaten cookie dough bites in the refrigerator
  • *Bonus tip: these can be baked in the oven if you like them warm with melted chocolate chips! In a 350F oven, bake for about 6-7 minutes. They will not flatten like a cookie so simply flatten with the bottom of a drinking glass after you bake them!
