How to Make Vegetable Frittata

Making this vegetable frittata is simple. Just follow the instructions below and you will have a tasty egg dish that your friends and family will enjoy in no time at all.

  1. Preheat the oven to 350 F. 
  2. Heat oil of choice in a cast iron pan over medium heat. 
  3. Sauté onions in heated oil.
  4. Add desired veggies, and stir occasionally to cook evenly. 
  5. In a bowl, whisk the eggs.  
  6. When the veggies are beginning to soften, gently pour in the eggs.
  7. Optional: sprinkle shredded cheese over top. 
  8. Place the frittata in the oven, and bake until golden brown, approximately 20 minutes. 
  9. Serve warm with a side salad.

Leftover frittata can be stored in an airtight container for up to three days. Reheat in the oven at 350F for 10-15 minutes or until heated through. Or you can reheat in the microwave at 50% power for 30-60 seconds.

Here are a few tips that you can use to make sure that your frittata turns out perfectly every time you make it.

  • Add the salt and pepper to your eggs when you are whisking them. This gives them the perfect amount of seasoning.
  • If you are using vegetables that have different cooking times, then add them to your skillet in batches with the longest time going first.
  • The vegetables you can add to this dish are unlimited but some of my favorites are bell peppers, mushrooms, asparagus, broccoli, carrots, and zucchini.
  • I like to make this recipe towards the end of the week so that I use up the vegetable odds and ends that are in the fridge and need to be used.
  • If you enjoy cheese and eat dairy then add your favorite shredded cheese. But, this dish will taste amazing without it.

  • 12 eggs
  • 1 medium yellow onion diced
  • 2-4 cups diced veggies seasonal, or your favorites
  • 2 tbsp avocado oil, olive oil or ghee (for cooking veggies)
  • ½ cup to 1 cup shredded cheese optional and totally not necessary for a delicious frittata
  • 1 tsp sea salt
  • 1/2 tsp pepper
