Ingredients
- 1/4 cup avocado oil
- 1/4 cup diced onion
- 2 tbsp rice vinegar
- 2 tbsp celery minced
- 2 tbsp carrot diced
- 1 inch piece of fresh ginger about 1 tbsp
- 1 tbsp tamari
- 1 tbsp filtered water
- 1 1/2 tsp tomato paste
- 1 1/2 tsp maple syrup or keto syrup or allulose syrup
- 1 tsp lemon juice
- 1/2 tsp sea salt
Instructions
- Place all of the ingredients in a blender and blend until the dressing is completely smooth.
- Store the dressing in a jar in the refrigerator and enjoy!
Notes
When I pack Dr. B's salad for work, I always start with dressing on the bottom of the container. This salad has: ginger dressing, cooked shrimp, avocado, peas, red bell pepper, carrot, cucumber, green onion, mixed greens, broccoli sprouts and cashews. When he gets to work, he will shake the salad and then dump it on a plate and enjoy!
