These high protein banana pancakes are grain free, keto and low carb and sweetened with just one banana. With no added sugar, these high protein pancakes produce a level glucose response due to their perfect ratio of fat, fiber and protein, making them blood sugar friendly. These easy, one bowl banana pancakes have quickly become a family favorite at our house and make the perfect high protein breakfast or after school snack for my growing teenage son. This recipe makes 28-32 silver dollar pancakes. I figured one serving is 7-8 pancakes.

  • In a medium size bowl, add almond flour, protein powder, chia seeds cinnamon, and salt and mix well with a whisk or a fork.
  • Peel and smash the ripe banana into the dry mixture using the back of a fork.
  • Add vanilla, eggs and milk of choice and blend well using a fork or a whisk. if the batter seems too thick, add more milk until it is a consistency that you like.
  • Cook the pancakes in a griddle on medium heat with a little coconut oil or ghee to grease the skillet.
  • Enjoy with maple syrup or keto syrup, yogurt, berries, chopped nuts, cranberry sauce, or cherry jam!
