Easy Baked Fish in Sheet Pan

Ingredients
 

  • 2 pounds boneless fish fillets or steaks- use halibut ling cod, salmon (look for wild caught fish)
  • Sea salt
  • Freshly ground pepper
  • 2 large garlic cloves minced
  • 1 teaspoon paprika
  • teaspoon ground cinnamon
  • 1 pound red onions cut in half lengthwise and then sliced thinly across the grain
  • 1 pound grape or cherry tomatoes cut in half
  • 2 tablespoons extra virgin olive oil
  • Juice of 1 large lemon
  • Leaves from 1 bunch flat-leaf parsley chopped (about 1/2 cup)

Instructions
 

  • Pat the fish  dry with papers towels. Lay the fish on a baking sheet lined with parchment paper. Salt and pepper both sides of the fish. Sprinkle fish with garlic, paprika, and cinnamon. Arrange sliced onion and cut tomatoes over the fish. Drizzle olive oil and lemon juice over the spiced fish and onion and tomatoes. Place in the oven and bake until the fish is opaque and pulls apart easily with a fork, about 30 minutes. Serve hot with chopped parsley garnish.
