Beth Bollinger of Nest WellnessI love a challenge so when someone reached out to me to request a low carb, sugar free, nut free, gluten free banana bread of course I said yes! This banana bread is super moist and delicious, and comes together with just a few simple ingredients. Makes one loaf.

Equipment
- 9 x 5 loaf pan
Ingredients
Dry Ingredients
- 3/4 cup vanilla protein powder
- 1 tsp baking soda
- 1/4 tsp salt
Instructions
- Preheat oven to 350
- Grease a loaf pan with ghee or coconut oil and line with parchment paper
Mix the wet ingredients
- With the back of a fork or a potato masher, smash the ripe bananas- be sure to leave some "chunks" as this contributes to the moistness of the finished loaf
- Stir in eggs, tahini, and vanilla and mix well
Mix the dry ingredients
- Mix all of your dry ingredients together in a separate bowl
- Fold the dry ingredients into the wet ingredients
Get ready to bake!
- Pour the batter into the prepared loaf pan. Spread evenly with the back of a spoon or a spatula.
- Bake for about 45-50 minutes, until toothpick inserted comes out clean.
- Enjoy warm with grass fed butter!Store any remaining banana bread wrapped tightly in plastic wrap.
