How to Make Sweet Potato Egg Nests

  1. Preheat the oven to 350ºF/180ºC.
  2. Spiralized sweet potatoes are easy to make using a spiralizer or even easier, purchase spiralized sweet potatoes in the produce section of your market.
  3. Blanch the sweet potato curls in boiling water for about 4-5 minutes, drain and rinse with cold water, and pat dry.
  4. Toss blanched spirals with olive oil

  • 2 small eggs
  • 1-2 tbsp olive oil
  • salt and pepper

Instructions
 

  • Preheat the oven to 350ºF/180ºC.
  • Spiralized sweet potatoes are easy to make using a spiralizer or even easier, purchase spiralized sweet potato in the produce section of your market.
