Keto Sushi Rice Recipe
Beth Bollinger of Nest WellnessThis keto sushi rice recipe actually contains no rice! The "rice" is cauliflower but I don't think you will actually miss "real" rice with this recipe. Enjoy sushi again without the blood sugar spike, bloating and the need for a nap afterwards. I was developing a sushi recipe for Levels Health and I always do weeks of research ahead of time. I looked at youtube videos and scoured the web to see how others were making keto sushi. There seemed to be just two ways: either cooked or raw cauliflower mixed with cream cheese. I don't tolerate dairy so I knew this was not an option. I usually get my most inspired ideas first thing in the morning when I am just waking up. This is when this recipe came to me. I believe I have created something no one else has ever done and I am so very pleased to share it with you.

- 12 ounce bag frozen cauliflower rice
- 1 tbsp unseasoned rice vinegar
- 2 tbsp psyllium husk flakes
- 3 tsp sugar free powdered sugar I used powdered monkfruit sweetener
- 1/2 tsp sea salt
Instructions
Make your sushi "rice"
- Steam your bag of cauliflower rice according to the package directions- mine took 4 minutes
- Pour the bag of cauliflower rice into a colander and allow it to drain. Do not squeeze the water out, simply allow it to drain
- Pour the drained cauliflower rice into a medium bowl
- Sprinkle your cauliflower with rice vinegar, psyllium, powdered sugar and sea salt. Mix well until all the ingredients are combined. Pop the “rice” into the refrigerator while you prepare your fillings. “Rice” can also be made a day or two ahead of time and stored in an airtight container in the refrigerator. Leftover sushi rice freezes well too!
