Beth Bollinger of Nest Wellness
These high protein banana pancakes are grain free, keto and low carb and sweetened with just one banana. With no added sugar, these high protein pancakes produce a level glucose response due to their perfect ratio of fat, fiber and protein, making them blood sugar friendly. These easy, one bowl banana pancakes have quickly become a family favorite at our house and make the perfect high protein breakfast or after school snack for my growing teenage son. This recipe makes 28-32 silver dollar pancakes. I figured one serving is 7-8 pancakes.
In a medium size bowl, add almond flour, protein powder, chia seeds cinnamon, and salt and mix well with a whisk or a fork.
Peel and smash the ripe banana into the dry mixture using the back of a fork.
Add vanilla, eggs and milk of choice and blend well using a fork or a whisk. if the batter seems too thick, add more milk until it is a consistency that you like.
Cook the pancakes in a griddle on medium heat with a little coconut oil or ghee to grease the skillet.
