Super moist, flourless triple chocolate banana bread could be a decadent dessert, an afternoon treat or a lovely breakfast with a side of protein and some berries. I love how easy this moist and tasty banana bread comes together and no one will guess that it's healthier!
3ripe bananasbananas vary in size so you will need 2 packed cups of mashed banana
4eggs
1cupnut butterI use natural peanut butter but you could use almond or cashew butter too! Just be sure you are using nut butter without added oils or sugars.
3tbspprotein powderI use chocolate Ora Organics protein powder for that 3rd source of chocolate! Save 20% in my Fullscript store. You will need to make account, but then everything will always be 20% off!
sprinkle a few dark chocolate chips on top of the batter before baking (optional)
Instructions
Preheat oven to 350
Grease a loaf pan and line with parchment paper
"wet" ingredients
With the back of a fork or a potato masher, smash the ripe bananas- be sure to leave some "chunks" as this contributes to the moistness of the finished loaf
Stir in eggs, nut butter, and vanilla and mix well
"dry" ingredients
Mix all of your dry ingredients together in a separate bowl
Fold the dry ingredients into the wet ingredients
Add in the chopped walnuts and chocolate chips
Get ready to bake!
Pour the batter into the prepared loaf pan. Spread evenly with the back of a spoon or a spatula. Sprinkle a few chocolate chips on top of your batter.
Bake for about 47-50 minutes, until toothpick inserted comes out clean.
Enjoy warm with grass fed butter!
Store any remaining banana bread wrapped tightly in plastic wrap.
