Homemade Paleo Gummies

My kids love these homemade paleo gummies and we have been making them since they were small. This is a "treat" for adults or kids that you can feel good about serving because they are fairly low sugar and they provide a good source of collagen that helps to support healthy hair, skin, nails, joints and bones.

Course Sweet Treats

Ingredients
 

  • 1 cup organic fruit juice such as grape, tart cherry, cranberry, or pomegranate, even carrot juice!
  • 2 tablespoons freshly squeezed lemon juice
  • ΒΌ teaspoon honey optional, leave this out if the juice is sweet or use allulose syrup or stevia to keep them sugar free!
  • 4 tablespoons gelatin

Instructions
 

  • Pour the gelatin into the bottom of a medium sized saucepan
  • Pour the fruit or vegetable juice and lemon juice over the gelatin and using a fork, mix well. It will make a thick paste- just keep mixing until there are no lumps.
  • Heat the mixture over a low flame until the mixture "melts" and becomes clear
  • Pour the mixture into gummy bear or other silicone molds. It will be easier to transfer from the saucepan to a small pitcher or measuring cup with a "pour" spout
  • To speed up the cooling and hardening process you can put your molds in the refrigerator until cool
  • Once the gummie shapes have cooled and hardened, pop them out of the molds. They will keep in a jar or other container in the refrigerator for about a week (if they last that long!)

Notes

Refrigerate for 2 hours.
