These easy keto tortillas that are both grain free and low carb and are as close as you will get to a "real" tortilla. We all love taco night but lettuce wraps, while a great sub for high carb tortillas, are just not the same as the "real thing". The taste and texture of these keto tortillas are similar to a good corn tortilla. Enjoy these tortillas as a taco, quesadilla or as a sandwich wrap. With just 3 net carbs and 8 grams of protein per tortilla, they are a healthy addition to taco night! In a medium sized mixing bowl, mix together dry ingredients: almond flour, xanthan gum, baking powder, and sea salt using a whisk or a fork.
Add egg and water and mix well with a fork. Once the dough has gathered together, roll dough into a disc using your hands and divide into 4 pieces.
Roll each of the 4 pieces of dough into a ball using your hands. Sprinkle with almond flour if dough is too sticky. Roll tortillas between 2 sheets of parchment paper.
Heat your skillet to medium. Cook each tortilla in a dry cast iron or other hot pan until golden. Use tortillas as you would for tacos, or quesadillas. If you have leftovers, store them wrapped well in the refrigerator.
