Ted Lasso shortbread biscuits made grain and refined sugar free! If you are as sad as I am that Ted Lasso has come to an end, do what Ted would do and bake a batch of shortbread biscuits. I am willing to bet my boots that these will brighten your day🔆
1/2cupunsalted grass fed butterroom temp and cut into cubes
Instructions
Preheat oven to 350 degrees
In the bowl of a food processor, add almond flour, arrowroot and salt. Blend until completely mixed.
Add almond extract and honey and cubed room temperature butter. Mix until dough forms.
Roll the dough out between two sheets of parchment paper to a thickness of about 3/8"
Using a ruler and a pizza cutter, cut the biscuit dough into 1" x 2 1/2" rectangles.
Use a toothpick or a skewer to make little holes in each biscuit.
Bake for 6-7 minutes until just a little light brown around the edges. These cookies taste best if they are a little under done when you remove them from the oven.
Allow the cookies to cool and then enjoy them or box them up like Ted Lasso in little pink boxes and gift them to your friends!
