Ted Lasso shortbread biscuits made grain and refined sugar free! If you are as sad as I am that Ted Lasso has come to an end, do what Ted would do and bake a batch of shortbread biscuits. I am willing to bet my boots that these will brighten your day🔆

Equipment

  • food processor
  • parchment paper
  • metal ruler
  • Pizza Cutter
  • pink boxes

Ingredients
 

  • 2 cups almond flour
  • 1 cup arrowroot
  • 1 tsp sea salt
  • 1 tsp almond extract or vanilla extract
  • 1/3 cup honey or maple syrup or keto syrup
  • 1/2 cup unsalted grass fed butter room temp and cut into cubes

Instructions
 

  • Preheat oven to 350 degrees
  • In the bowl of a food processor, add almond flour, arrowroot and salt. Blend until completely mixed.
  • Add almond extract and honey and cubed room temperature butter. Mix until dough forms.
  • Roll the dough out between two sheets of parchment paper to a thickness of about 3/8"
  • Using a ruler and a pizza cutter, cut the biscuit dough into 1" x 2 1/2" rectangles.
  • Use a toothpick or a skewer to make little holes in each biscuit.
  • Bake for 6-7 minutes until just a little light brown around the edges. These cookies taste best if they are a little under done when you remove them from the oven.
  • Allow the cookies to cool and then enjoy them or box them up like Ted Lasso in little pink boxes and gift them to your friends!
