Mummy Meatzas

Just because you are following a low carb or keto diet doesn't mean you have to give up eating pizza. Really, what would life be like if we couldn't eat pizza?
These meatzas or mini pizzas combine all the cheesy goodness of pizza with a low carb meat-based crust instead of the traditional flour crust.

Ingredients
 

  • 1 lb ground turkey or chicken
  • 1 egg
  • 1 cup spinach fresh or frozen, chopped
  • 1 tbsp Italian seasoning
  • 1 tsp salt
  • ½ tsp pepper
  • ½ tsp fennel seeds
  • 1 cup hard goat cheese shredded
  • ½ cup pizza sauce unsweetened
  • black olives sliced
  • 4 oz hard goat cheese cut into matchsticks

Instructions
 

  • Preheat the oven to 450 degrees Fahrenheit.
  • Combine ground meat, egg, finely chopped spinach, seasoning, and cheese together in a medium bowl. Mix well.
  • Using an ice cream scoop, make meat “balls” and line them up on a parchment-lined baking sheet. Smash the balls flat with the bottom of a glass, your hands or the back of a spoon.
  • Smear a teaspoon of pizza sauce on each meat patty and garnish with cheese strips and sliced olives.
  • Bake at 450 for 8-10 minutes until cooked through
