Eggnog No Oats

Eggnog No Oats is a Holiday makeover of my classic No Oats. Overnight No Oats was created as a low carb alternative to overnight oatmeal. I have been wearing a continuous glucose monitor for over two years now. One of the things that became apparent to me almost immediately was that the carb content in oatmeal is very high in relation to its protein content. So high in fact, that even when combined with protein, I still get massive blood sugar spikes with oatmeal. With blood sugar spikes I get chest pain and feel jittery and then of course I will have a blood sugar crash an hour later and be hungry again. So oatmeal is a definite no-go for me, it's just not worth the blood sugar roller coaster and the chest pain. I wanted to create something like overnight oats that could be prepped the night before, stored in the refrigerator overnight and enjoyed in the morning. That is how Overnight No Oats was born. My son calls them "NOATS". My husband, Dr. B, will grab his jar of Overnight No Oats and take it to work with him. They can also be prepped in the morning and enjoyed warm!

  • In a lidded jar, add 3 seeds, goat whey, cinnamon and cardamom. Shake very well to mix.
  • Pour eggnog over the blend and shake again. You might need to mix with a spoon to make sure seeds on the bottom of the jar are mixed in too.
  • If you are preparing at night store in the fridge and top with yogurt and pomegranate arils in the morning.
  • If you will be enjoying right away, allow seeds to soak up eggnog for a few minutes, then top and enjoy!
