Snickerdoodle Protein Balls- gf, df, and blood sugar friendly

I love a good protein packed snack and these snickerdoodle no bake treats are no exception! They taste just like cookie dough and are gluten free, dairy free and blood sugar friendly, meaning they will not spike your blood sugar! These protein balls come together in just a few minutes and can be made into adorable pumpkin shapes for Fall.

optional "stem" for pumpkin shapes

Instructions
 

  • In a small mixing bowl, add nut flour, protein powder, and cinnamon and mix well with a fork or whisk.
  • Next add nut butter and syrup and mix well with the back of a fork or a spatula.
  • Roll into balls and coat with cinnamon and allulose mixture
  • Optional seasonal idea: shape the balls into pumpkins using a toothpick. Method is easy- simply make 6 or 7 lines around the sides of the balls to mimic a pumpkin shape.
  • Add a chocolate chip stem.
