Ingredients
 

Makes 2 Sweet Potato Egg Nests

  • 1 small/medium sweet potato peeled
  • 2 small eggs
  • 1-2 tbsp olive oil
  • salt and pepper

Instructions
 

  • Preheat the oven to 350ºF/180ºC.
  • Spiralized sweet potatoes are easy to make using a spiralizer or even easier, purchase spiralized sweet potato in the produce section of your market.
  • Blanch the sweet potato curls in boiling water for about 4-5 minutes, drain and rinse with cold water and pat dry. 
  • Toss blanched spirals with olive oil
  • Arrange the spirals on parchment paper on a baking sheet into a nest shape with an indentation in the center where the egg will go. Bake for about 8-9 minutes. 
  • Remove the nests from the oven and crack an egg into the center of each nest. Place in the oven again and bake for about 3 minutes or until the egg white turns opaque but the yolk is still soft.
  • Sprinkle with salt and pepper and enjoy warm!
