Dr. Bollinger's "Spaceman" Breakfast Bars

My husband, as his colleagues know, is not a morning person. In order to get him fueled and out the door on surgery days, we have developed what Mike refers to as his “Spaceman" Breakfast Bars. All-in-one nutrition in a bar form that he can eat on the go. He pairs a breakfast bar with a green juice in the morning for fast, complete nutrition.

Ingredients
 

Preheat oven to 350 In the bowl of a food processor rough chop nut mixture:

In the food processor, mix until smooth this chocolatey mixture:

Instructions
 

  • Pour the chocolatey mixture into the bowl with the rough chop nut mixture and mix by hand with a spoon or spatula until completely combined. Grease an 8 x 8 pan with coconut oil and press “dough” into the pan firmly.
  • Bake for 10 minutes in 350° oven.
  • When cool, cut into squares or rectangles and store in an airtight container. If you like a crisper, less crumbly texture (especially if you are eating it in the car like Dr. B), you can dehydrate the breakfast bars overnight in a food dehydrator. Enjoy!

Notes

Optional add in: a scoop of protein powder to increase the protein content. I like So Lean, So Clean in chocolate, unflavored and vanilla. It is available in my Fullscript store.
