If you have never had cauliflower steaks, you are in for a treat! This recipe was developed for Levels Health and the crispy, savory marinade makes these cauliflower steaks pretty special and a new staple in our house.
1tbspfresh basil, mincedoptional garnish for your finished steaks
Instructions
Preheat oven to 400
Cut the stem end off of the cauliflower so that the head sits flat on your cutting board and doesn’t roll. (don’t core the cauliflower because you need the stem to hold the steaks together) Remove any loose or tough leaves. Small leaves are fine to keep -they will get crispy and taste delicious.
Slice the head of cauliflower into “steaks” about 3/4” thick. This will ensure that your steaks are cooked through and get crispy on the edges
Line a baking sheet with parchment paper and place the cauliflower slices on the paper. Depending on the size of your head of cauliflower you will get 2-4 “steaks”
In a small bowl, mix olive oil, apple cider vinegar, garlic, paprika, coriander and salt. This will make a beautiful red marinade.
Brush both sides of your steaks generously with the olive oil mixture.
Bake cauliflower steaks for 15 minutes, then flip to cook another 15 minutes on the opposite side. At this time, brush with any remaining marinade.
