Easy Low Carb Rolls

My son and I were experimenting in the kitchen and attempting some low carb, high fiber soft pretzels and made dinner rolls instead! Crunchy on the outside and light and airy inside, these little rolls would be great with soup or salad or stuffed with goat cheese, pate, grass fed butter or dipped in olive oil!
However you eat them, enjoy the simplicity of this recipe.

Ingredients
 

Dry Ingredients

Wet Ingredients

  • ½ cup unsweetened yogurt Greek, goat, or coconut yogurt will work!
  • ½ cup filtered water
  • 2 tsp olive oil (optional but adds extra fat and flavor)

Instructions
 

  • Preheat oven to 325
  • Mix the dry ingredients together in a medium sized bowl
  • Mix the wet ingredients together in a small bowl
  • Pour wet ingredients into the dry ingredients and mix well. Allow the dough to rest and “puff” up for a few minutes
  • Roll the dough into a disk and cut into 12 even pieces
  • Roll each piece into a ball and place on a parchment lined baking sheet
  • Sprinkle with coarse sea salt, bagel spice or sesame seeds and bake at 325 for about 35-38 minutes
  • Remove from the oven when they are a deep golden brown and enjoy!
