PALEO, KETO, DAIRY FREE
If I had known how easy it was to make mayo in the food processor, I would have stopped buying the store bought mayo years ago! Most store bought mayo contains toxic oils that you want to avoid such as canola and soybean and the mysterious “vegetable” oil. These are lab-made oils and are not health foods. If you do buy store bought mayo, look for those made with only avocado oil or olive oil.
This mayo uses healthy oils and it is simple to make, I promise!
2 egg yolks
1 teaspoon dijon mustard
1 teaspoon apple cider vinegar
1 TBS lemon juice
½ teaspoon salt
8 cloves roasted garlic or 1-2 fresh cloves
Blend the above ingredients in the food processor until it forms a smooth paste.
While continuing to blend, pour:
¾ cup olive oil or avocado oil through the hole in the plunger on the lid of the food processor. Yes! That is what that hole is for!
Blend until it looks like mayo. Keep in a jar in the refrigerator for up to 10 days. Makes a great spread or dip for oven baked sweet potato fries.Print
