Paleo Crepes

4 eggs

2 teaspoon ghee or coconut oil

2 TBS water

½ cup arrowroot

2 teaspoon coconut flour

Pinch salt

1 teaspoon vanilla (omit for savory crepes)

Place all ingredients into a blender, puree until all ingredients are combined.

Heat a medium skillet over medium-low heat. Grease skillet with coconut oil or ghee, and pour batter onto the surface. 

Cook each crepe until opaque, and lightly bubbly. Flip over, and fill with desired filling.

Enjoy.

Description

These light and fluffy paleo crepes are a treat! Served for breakfast or dinner- fill them with fruit, or roasted veggies.
