Homemade Paleo Gummies

Ingredients:

1 cup organic fruit juice (such as grape, cherry, cranberry, or pomegranate, even carrot juice!)

2 tablespoon freshly squeezed lemon juice

¼ teaspoon honey (optional, leave this out if the juice is sweet)

4 tablespoon gelatin

Instructions:

Bring the juice to a boil in a medium saucepan.

Allow to cool for about 3 minutes, then stir in lemon juice, and honey, if using.

Very slowly whisk in the gelatin (if this is rushed then the bears will turn out lumpy).

Allow the mixture to cool almost to room temperature before pouring into gummy bear molds. 

Refrigerate for 2 hours.

Enjoy.
