Healthy Pumpkin Chai Muffins

MAKES: 12 MUFFINS

PREHEAT OVEN TO 350°F

Ingredients:

½ cup coconut flour 

¾ cup almond flour

¼ cup arrowroot

1 teaspoon baking soda

1 teaspoon baking powder

2 TBS chai tea spices, ground 

1 teaspoon cinnamon

½ teaspoon salt

Mix together the following ingredients in a second medium bowl and then add to dry ingredients:

⅔ cup coconut oil

½ cup coconut sugar (if you are following a keto or low carb diet you can substitute monkfruit sweetener)

2 eggs

1 ½ cups cooked pumpkin (1 can)

Once dry and wet ingredients are well mixed, gently fold in:

½ cup chopped walnuts

optional: top with chopped macadamia nuts

Bake in a lined muffin tin until tops are golden brown, about 18-20 minutes
