Healthy Spiced Cranberry Sauce Recipe

This flavorful spiced cranberry sauce is at favorite at our Thanksgiving table. I usually make it a week ahead to allow the flavors to meld.

1 12 oz package of fresh cranberries

1 10 oz package frozen cherries

1 cup freshly squeezed orange juice, pomegranate juice or 2 whole oranges, peel removed and chopped

1 teaspoon grated ginger

1 whole star anise

½ teaspoon cinnamon

⅛ teaspoon ground cardamom

1-2 teaspoon honey or maple syrup (only if needed)

Place cranberries, cherries, juice or orange slices and spices in a saucepan, over medium heat. Bring to a boil, stirring constantly, then reduce heat to low. Simmer for about 20 minutes, until berries have burst and sauce has thickened. Taste, and add honey or maple syrup only if needed. Remove star anise before serving or storing. Chill in the refrigerator until ready to serve. This flavorful cranberry sauce will keep several weeks in the refrigerator and is perfect on those leftover turkey sandwiches.
